Eyguebelle's Ypocras

Served chilled before or after meals, the Eyguebelle's Ypocras is a marvelous spice flavored wine.

Oldcook : Eyguebelle's Ypocras

The traditional Eyguebelle distillery, in Drôme Provençale, is the heiress to the knowledge of the Aiguebelle monastery, which produced liqueurs and syrups. Three enthusiasts of medieval gastronomy perfected the recipe and Eyguebelle made the Ypocras. Known as ypocras, ipocras, hypocras, hippocras, and many other spellings, it was the same drink all over medieval Europe for over 800 years.

Ypocras was created with wine from Drôme Provençale and with spices of Orient (cinnamon, ginger...) and a spice of Africa (grains of paradise or guinea grains). Ypocras is a marvelous drink with a rich and powerful flavor. Containing less alcohol (12,5°) than what is normal for a traditional drink, it is convivial and preferably served chilled. We serve Ypocras before meals as well as at the end of a meal. You can also boil pears or prunes with Ypocras for some marvelous desserts.
